Today's recipe comes from our interviewer for the week Annie Downs:
Okay, this is my very favorite salsa recipe. You can put it on chicken, or in tacos, or just eat it with chips. And depending on the season, you may want to leave out the avocado. Since I’m cooking for one, and this makes enough for four, I usually don’t use the avocado- it will last longer in the fridge. But if it is for a party, use the avocado- it’s delicious. [And I think I have officially over-explained at this point.]
AVOCADO/FETA SALSA
4 plum tomatoes, chopped
2 tablespoons finely chopped red onion
2 garlic cloves, minced
1 (4-ounce) package crumbled feta cheese
1 tablespoon chopped fresh parsley
3 tablespoons red wine vinegar
2 tablespoons olive oil
1/2 teaspoon dried oregano
1/2 teaspoon salt
2 avocados, chopped
Stir together first 9 ingredients. Gently stir in avocado just before serving.
And to make it a salad, just put the salsa on a bed of lettuce and top it with grilled chicken or taco meat, whatever. It's awesome that way because it really almost replaces dressing.

Pride and Prejudice...sigh. Liz on Top of the World was to be played at my daughter's wedding when she walks down the aisle. We had trouble finding the music for the cellists so it won't be played then. It will be played as they come into the reception, though.
Loved Annie's soup recipe she posted on her blog. Can't wait to try this one.
